Sorry for the super late response. I normally pick single nodes and I get this ping gap. I don't know if it has to do with my actual connection too because some days I will be on 215 ping and others there will be 20 more ping. This might have to do with traffic I guess? I did not read the FAQ - Nodes post before, however, I tried servers both close to me and close to the FF XIV servers. This probably has to do with my connection since trying other VPNs didn't make much of a difference for me.

One more question. Should I pay attention to RTT results from Dashboard or the server connection from the Status section?

Both.  First you should consider the connection between your desktop and mudfish node found at "Status -> Nodes" menu.  And Realtime RTT graph represents your expected ping with current mudfish node you'd picked.
